Tzatziki sauce
Ingredients

1/2 Cup finely grated cucumber

1 Cup of Greek yogurt

1 Tablespoon of Lemon Juice

1/2 Tablespoon Extra Virgin Olive Oil

4 Roasted garlic cloves ( you can use uncooked garlic, but roasted garlic is amazing)

1/4 Teaspoon seas salt

1 Tablespoon chopped dill

1 Tablespoon chopped mint
Method

Separate some garlic cloves or just simply roast a full head of garlic. Drizzle with olive oil and put into some foil. Set your oven to 180c and roast for 35-45 mins or until soft. Squeeze out the garlic into a bowl and use the back of a fork to mash

Place the grated cucumber on some kitchen towel to remove as much moisture as possible.

In a medium bowl combine cucumber, yogurt, lemon juice, olive oil, garlic, salt, dill and mint.

Store covered in the fridge until needed
